Happy Monday! Smoothies are one of my all time favorite meals to make for a quick meal or snack. My latest “little adapt” has been figuring out ways to fit as many veggies into a smoothie as possible without changing the taste and consistency too much. What I’ve figured out is that you can use 1/4 of a frozen banana and either 1/4 cup frozen zucchini or steamed, frozen cauliflower (you can just use raw, frozen cauliflower but I’ve found it to be a little harder on my digestion tbh) for the base and you still get the same creamy, sweetness with less sugar + carbs and more fiber + nutrients. This smoothie recipe tastes like you are treating yo self so give it a try ASAP!
- 6 oz oat milk or non-dairy milk
- ¼ cup sliced + frozen zucchini
- ¼ frozen banana
- ½ cup frozen strawberries
- 2 tbsp cacao powder
- 1 tbsp almond butter
- Handful of raw spinach or greens
- 1 tbsp chia seeds
- Sprinkle of shredded coconut on top
- Add all ingredients except shredded coconut to the blender and blend until well combined, but still thick.
- Top with shredded coconut and enjoy!
