Heat up a large skillet on low heat and add coconut oil, minced garlic, diced onion, curry powder, ginger, and turmeric. Mix together and heat for a few minutes until combined and onions start to become translucent.
Then add in coconut milk and water, and bring to a boil.
Add the veggies, greens, cauliflower rice + lentils and bring the heat to a simmer. Cover the skillet and simmer for about 30-35 minutes. Make sure to stir periodically + taste test to see if you need any additional spice.
Serve over brown rice + enjoy!
