My latest veggie craze in my smoothies is ZUCCHINI! Zucchini is rich in:
- Vitamin A – Great for immunity + vision
- Antioxidants – Necessary to decrease inflammation in the body
- Water – Aids in digestion
It’s also low in sugar + carbs, which makes it friendly for those who are carb conscious or on the keto diet. Unlike cauliflower that you need to steam and then freeze, you just need to dice it up raw + freeze it. Easy peasy lemon squeezy! If you love brownies + chocolate smoothies, this will be your next go-to — I promise!
Zucchini Brownie Smoothie

Ingredients
- 6 oz almond milk
- 1 cup frozen diced zucchini
- 2 tbsp unsweetened cacao powder
- ½ scoop chocolate protein powder
- 1 tbsp almond butter
- 1 tbsp ground flaxseed
- 1 handful spinach
- Splash of vanilla stevia
- Sprinkle of cacao nibs + drizzle of AB on top for decoration
- Optional: 1/2 tsp maca powder
- ½ tsp resistance starch
Instructions
- Place all ingredients except cacao nibs into the blender until well combined. (Add a handful of ice if you need it thicker!)
- Top with cacao nibs + AB to enjoy from your favorite mason jar and metal or rubber straw 🙂
