Lentil Sweet Potato Soup

Ingredients
- 1 tbsp coconut oil
- 1 onion chopped into fine pieces
- 1 tsp ginger
- 1 tsp cinnamon
- ½ tsp nutmeg
- ¼ tsp cloves
- ⅓ bag of baby carrots chopped into chunks
- 4 garlic cloves minced
- 2 sweet potatoes chopped into ½-1 inch chunks
- 4 cups vegetable broth
- 2 cups water
- 1 cup green lentils, thoroughly rinsed and washed
- Sea salt & Pepper to taste
Instructions
- Heat a large pot over medium heat. Add oil, onion, ginger, cinnamon, nutmeg, cloves, salt, pepper, and carrots. Cook for about 3-5 minutes, stirring frequently, until onions are soft but not browned.
- Then add garlic and sweet potatoes. Cook for about another 3-5 minutes and make sure all vegetables are coated with seasoning.
- Add 4 cups of vegetable broth + 2 cups of water and increase heat to medium-high. Bring it to a boil, and add lentils. Mix the soup together and then reduce heat to low. Simmer for 25 to 30 minutes, uncovered, or until lentils and potatoes are tender.
- Taste the soup and feel free to add any extra spice that you have already added to the soup.
- Serve immediately over your favorite greens, such as baby kale or spinach. Enjoy!
