Plant Based Chickpea "Chicken" Salad

Serves: 3-4
Ingredients
- 1 can of garbanzo beans, rinsed + drained
- 1 celery stalk finely diced
- 1 slice of white onion finely diced
- ½ tbsp mayo or vegan mayo
- 1.5 tbsp dijon mustard or honey mustard
- Salt + pepper to taste
- Optional: 1 tbsp mustard seeds
Instructions
- Place garbanzo beans in a medium sized bowls and use a fork or potato masher to mash half of the beans so you have a half mash and half bean consistency.
- Add in mayo, mustard, salt + pepper and mix.
- Add in onion, celery + mustard seeds and mix again. Taste test to see if you need to add more salt + pepper.
- Serve on a piece of toast on top of a layer of raw spinach and top with everything but the bagel seasoning as an open fast sandwich. You can also eat in lettuce wraps, with crackers or add to your favorite salad. Enjoy!
