It’s pumpkin season, baby! Have you had the craving for pumpkin lately, but don’t have any canned pumpkin? Don’t fret as this recipe only calls for pumpkin seeds and pumpkin spice (combination of cinnamon, cloves, nutmeg, allspice + ginger). I haven’t made my no bake energy nuggets in a while and figured I would give them a little festive kick with some pumpkin flavor. I also give you options in the recipe for no sugar natural alternatives for maple syrup and dark chocolate chips for all of my sugar conscious friends π
- 1 cup brown rice crisps
- Β½ cup gluten-free rolled oats
- 1 tbsp chia seeds
- 1 tbsp hemp hearts
- β cup chopped pumpkin seeds
- β cup mini dark chocolate chips or Lily's Dark Chocolate Chips (Stevia Sweetened)
- 1 cup creamy almond butter
- ΒΌ cup maple syrup or Lakanto Maple Flavored Syrup (Monk Fruit)
- 1 tsp pumpkin spice
- In a large bowl, mix all ingredients except almond butter, pumpkin spice, and maple syrup. (Note: You can substitute the pumpkin seeds, chia and hemp seeds for any seed/nut combo you want!)
- In a small sauce pan, warm up almond butter, maple syrup, and pumpkin spice until fully mixed (about 2 minutes).
- Add almond butter mixture to dry mixture. Stir until it forms a dough.
- Line a 8x8 pan with parchment paper and add dough into the pan.
- Press dough firmly down into the pan with your hands to make sure all dry ingredients are pushed down into the almond butter mixture.
- Refrigerate for 30-45 minutes or until cooled off.
- Pull parchment paper and bar mixture onto a cutting board. Cut into small squares.
- Keep in an airtight container in the fridge for a ready to eat snack or dessert. If you will be bringing them on-the-go, I suggest putting them in the freezer. Eat within 2 weeks and enjoy!
