Ingredients
- 2 peppers
- 1 head of bok choy
- ¼ bag of kale
- 1 tomato
- ½ white onion
- 3 carrots
- 1 can black beans
- 2 tbsp coconut Oil
- 1 cup of cooked quinoa
Instructions
- Preheat the oven to 425•F
- Stir fry bok choy, kale, white onion, tomatoes, carrots, black beans in coconut oil and seasoned with s&p then add in quinoa.
- Stuff peppers and cook on a baking sheet with parchment paper and cover with tin foil for about 25 minutes.
- Let cool and serve for deliciousness
